Gooey Sandwiches, from Grilled Cheese to Paninis

So, I looove hot sandwiches, whether it's a grilled cheese to go with a bowl of soup, or a ham & cheese as a quick lunch, but for the past year-and-a-bit, the panini has been at the top of my list. My first encounter with them was at a Starbucks in a Barnes & Noble. It was great, all melty and yum. Since then, I've tried (unsuccessfully) to replicate them using just a skillet. It [i]does not work.[/i]
This week, we got one of those two-sided indoor grills, and I'm writing this after having just made my first successful attempt at making a panini the right way. I call it... the St. Patty's Day Sandwich! Kinda uninspired, but that's what it was; leftover corned beef, carrots and cabbage, with two slices of cheddar cheese. The grill heated everything through, the cheese melted perfectly, and it tasted great.

So, what are other peoples' stances when it comes to gooey, cheesey, burst-of-flavor sandwiches? Got any particular favorites, techniques for making them, or places to go?

You want a sammich, go to Judies in Amherst. Her stuff will blow you away.

And strangely enough, none of the ingredients should work. For example, my favorite sammich of hers has curried chicken, bananas, cranberry sauce, peanut and coconut trail mix...I know it sounds bizzare, but it really works!

I used to joke with her that she was the Doc Brown of sammiches. She was obviously standing on the toilet hanging a picture when she fell, hit her head and woke up saying, "Hmmm...curried chicken and banana!"

Oooh. I love the Cuban sandwich at the Wagon Wheel, especially with a side of sweet potato fries.

But yeah, I love bizarre sandwiches! I mean, I wouldn't have made that St. Patty's Day thing otherwise. I'll definitely check out Judies, the place sounds awesome. :D

I make rlly good grilled Cheese sandwhiches... and I <3 them. actually one of my friends gets rlly hyper from cheese, esspeacailly grilled cheese sandwhiches. It's like me with Energy drinks.
